Hot Pocket

As I’ve said before on this blog, when I was growing up, we hardly ate fast food or even frozen food. We did though eat Ellio’s pizza which were always a special treat.

The only time I would be able to indulge in “junk food” was when I went to other people’s houses. One friend in particular would always have Hot Pockets as a snack. I always looked forward to going over to her house :)

In college, I went crazy my senior year and gained my Senior 10-15 since I wasn’t on a meal plan and had to “make” my own food. Food included canned soup, mac and cheese and Hot Pockets.

Anyway, the other day I had read that you should really only be eating about two squares of cheese in one sitting (which would each equal about the size of the thumb) and I panicked since I’ve been eating MUCH more than that on my pizzas. In an effort to decrease my cheese consumption on my pizzas, I stumbled upon something that tasted EXACTLY LIKE A HOT POCKET! I kid you not!

It’s basically the regular pizza I make but I doubled the amount of spinach I put on it and lessened the cheese to an actual serving and popped it in the toaster.

Even though there’s not a lot of cheese, you still get cheese in every bite. And I have to say, this Whole Foods marinara sauce is the best jarred sauce I’ve ever tasted!

I tried this combination on a whole wheat tortilla but it doesn’t taste as good. You need to Lavash bread because it’s much breadier and more like a Hot Pocket crust. This is certainly not my most genius creation but it’s easy, relatively healthy, and delicious!

The Reason I Bought a Toaster

I can’t tell you how happy I am to have “homemade” pizza back in my life.

Recently, I discovered lavash bread. It’s a denser bread that originated in Armenia. It’s delicious and PERFECT for thin crust toaster pizzas.


You can get them in whole wheat, white, or even flavored!

I used a Whole Foods brand marinara sauce for the sauce.


It is soooooooo good and has huge chunks of tomato in it, which is delightful. It’s tastes very fresh and doesn’t have too many ingredients in it.

I thought it might be a good idea to get some veggies and nutrients on my pizza so I sauteed a whole red pepper and a handful of spinach in a pan with a little bit of extra virgin olive oil.


I layered on some muenster cheese on top of the sauce and then put another little layer on top of the veggies to hold them in place.


A few minutes in the toaster and we’ve got perfection:



The lavash bread fits perfectly inside the toaster making me one happy camper :)

Oops, I did it again!

Yes folks, I ate pizza AGAIN. I’m now contemplating going on a cheese fast for at least two weeks and see where that takes me. It doesn’t help that I totally had an enabler whose favorite restaurant is a place that specializes in pizza.

We started with freshly baked bread (or so I assume) that we dipped in olive oil and a tangy, tomato-flavored oil. Katy got a shirley temple which was one of the prettiest I’ve seen!

We then ordered the Filetto pizza with mozzarella bufala, vesuvian cherry tomatoes, basil, and parmigiano. Yum!

It was amazing! The dough was chewy and soft and the cheese, of course, was fresh and amazing. I do wish there was a little more basil but that’s okay!

It wasn’t as big as this picture makes it seem!

I also got a salad on the daily specials menu which was fennel, arugula, blood orange, parmigiano, olives, and roasted red peppers.

Yum! The olives were really green and quite large! You can’t see the oranges hiding underneath, but they were there and went perfectly with the fennel.

The service was really great and our food came out super quickly. The pizza was $15 and the salad was $9 (!!!!!!) so it wasn’t too bad, price-wise.

I would definitely go back. I highly recommend it if you’re in the area!
