Coconut Shrimp Success

You’re going to be seeing quite a few shrimp recipes on the blog because of my two ton bag of frozen shrimp. I’m telling ya, if you can get it on sale, it’s so worth it! Especially because I hear shrimp will be hard to come by because of the oil spill.
This recipe is definitely one of my favorites. I adapted it from a Cooking Light recipe so it’s not only healthy but ridiculously delicious. And because I had all of the ingredients on hand, it was also a cheap meal! Love it when that happens.
Ingredients:
Cooking spray
6-8 raw shrimp (peeled and deveined but with tail)
1 Tablespoon corn starch
¼ teaspoon salt
¼ teaspoon crushed red pepper
1 large egg white
½ cup shredded coconut
Directions:
Preheat oven to 400 degrees.
Thaw shrimp and pat dry with paper towels.
In a shallow bowl, mix the corn starch, salt and red pepper.
In a separate bowl, pour egg white and in yet another bowl, dump the shredded coconut.
Dip the shrimp in the corn starch mixture, then egg white, then shredded coconut and place on a small baking sheet coated with cooking spray.
Once you’re done with the shrimp, spray a thin coat of the cooking spray on top of the shrimp and pop it in the oven for 10 minutes.
After 10 minutes, turn the shrimp over and bake for another ten minutes.
Take out of oven and let cool. I definitely did NOT let it cool because I was so eager to eat that I burned my tongue. Don’t do that.

I served it over a bowl of spinach and avocado. It was the perfect accompaniment! You have the crunchy and delicious coconut shrimp paired with the creamy avocado. It was pure heaven!!!
Seriously though, this shrimp was A.M.A.Z.I.N.G!!! And so easy! Granted, you do dirty up quite a few bowls but the prep time was less than ten minutes.
The coconut was perfect sweet with a little kick (salt and red pepper) and it wasn’t over or undercooked. I’m definitely going to be making this again for guests!

On another note, my dad gave me this fancy-shmancy programmable coffee maker the other day and I still cannot figure out how to use it. I study the directions every morning (since Monday) and it seems quite convoluted. Now, not to toot my own horn, but I consider myself a fairly intelligent woman yet this coffee maker alludes me. It filters the water, grinds the beans, and then makes the coffee whenever you tell it to so you can imagine it has quite a few pieces and procedures to figure out. My brain just cannot handle it. Help!
Unfortunately, it’s been sitting on my coffee table since Sunday so it’s the first thing I see when I step into my apartment. And every day I come home and see it, I think: “Shion versus Coffee Maker.” Is that weird? Probably.
I’m going to figure this out, kids. I am.
Keste Pizzeria

Ever since Beth and I went on Scott’s Pizza Tour, we’ve been talking about going to Keste to try the “original pizza” with lard, olive oil, and cheese.
We finally went yesterday and I can’t tell you how excited I was. I mean, when a Pizza Enthusiast tells you to go somewhere, YOU GO.
Unfortunately, there was no outdoor seating but we got a seat inside right away. Many of the waiters there were Italian as were the patrons. Always a good sign!
We ordered the Margherita pizza (which Scott says you should order to properly base your opinion on how good a restaurant’s pizza is – since it’s unadorned and basic) and the Mast’nicola, which was the lard pizza.
The Margherita pizza was $12 and the Lard Pizza (Mast’nicola) was only $9! VERY reasonably priced
I also ordered an iced tea which came in this little carafe. So cute!
And now the moment you’ve all been waiting for…
Presenting, the ORIGINAL pizza:
You can see the piece of lard, which just looks like the fatty part of bacon. Sitting on top of the crust was a thin layer of olive oil, pecorino romano, lard pieces, and basil. Truthfully, it was basically just cheese and crust but the crust was AMAZING! It was chewy inside but crispy on the outside.
I will say, though, that it was slightly too salty for my taste and I wish they added the basil AFTER it came out of the oven so that it actually tasted like basil, but it was still delicious!
It took about 10-15 minutes for the pizza to come out so the oven must have been super duper hot!
The Margherita pizza did not disappoint!
You really can’t go wrong with fresh mozzarella. I mean, really.
Would it be weird if I made the above picture my screen saver? Pure heaven! The sauce was really light and not too salty, not too sweet. Again, the crust was DElicious!!! And for it being personal pizzas, it was pretty large!
I think Keste is now my favorite pizza place in New York City, although I’m going to have to go back to John’s Pizza again just to make sure. The decor was really nice, service was excellent and the pizza was top notch! I’m not sure I would get the Mast’nicola again but I’m definitely glad I tried it.
