Oatmeal Pancakes

I came home last night after a pleasant dinner with friends to find this:

There aren’t enough words…

Thankfully, with the help of Beth, I had hunted down coconut M&M’s, so the thought of eating those later is keeping me sane.

Sometimes I wake up in the mornings and I absolutely have to have something sweet for breakfast. This is a problem because I never have pancake mix in my apartment because I never have milk in my fridge because I never want to have dairy because I think the hormones in animal products make me sick?

In any case, if I want to have something sweet I will make French toast although the chances of me actually making it before work are slim to none. Actually, none thus far.

BUT I finally decided to try out this oatmeal pancake that Kath makes. It’s healthy, looks easy and I always have the ingredients on hand.

Spoiler Alert:

It.was.amazing.

Ingredients:

1/3 cup old fashioned oats

1/3 cup egg whites

1/2 teaspoon baking powder

1/2 teaspoon vanilla

A few shakes of cinnamon
Directions:

Soak oats and egg whites in a small bowl for at least 10 minutes.

The first time I made it, I soaked it for about 10 minutes while I showered and the second time, I popped it in the fridge while I went to the gym for an hour and they had the same consistency. I thought if I soaked it for a longer period of time, it would be a little less runny, but no dice. I guess the oats can only soak up so much liquid?

Then mix the baking powder, vanilla and cinnamon. The cinnamon gives it a lovely coffee color, making it look more like a pancake than without, so I suggest not skimping on this ingredient. Cinnamon is also good for fat burning, apparently…

Then heat in a pan with a little bit of cooking spray, just like you would a regular pancake.

Cook for about 3 minutes per side.

Voila!!!

Add appropriate toppings. Mine including yogurt, walnuts and maple syrup.

The verdict? One of the best breakfasts I’ve ever had. Sure, the consistency is a little off, if you’re expecting fluffy pancakes (it’s kind of gummy in texture), but otherwise, it does a great job of replacing the standard pancakes we’ve come to know and love. It’s basically oatmeal in a pancake form! It doesn’t get much better than that!

Here is why this is such a winner breakfast:

1)      Because of the egg whites, it REALLY fills you up. I usually eat breakfast around 7:45 and will make it MAYBE until 12:00 before I get hungry again, but after this breakfast, I can last until 12:30-1:00 before I get cranky. In fact, both days I had prepared to eat my usual apple on the side but I didn’t get to it because the pancake filled me up!

2)      It’s healthier than the average pancake and has more nutrients.

3)      You can easily make just one serving.

4)      The ingredient list is quite small.

5)      It takes about 3 minutes tops to prepare.

6)      You can eat maple syrup.

I suggest you try this tomorrow morning. Do itttttttttttttttttt.
