Blueberry Oatmeal Cookies
If there were more hours in a day, I would do two things: bake and sleep more.
There’s something so comforting in baking and following a recipe – for the most part. You really have to concentrate on measuring things out and whatever may be bothering you just disappears (along with your waistline).
Ever since my friend Zach requested oatmeal cookies a few years ago, I’ve been trying to find the most perfect oatmeal cookie recipe. Most of the recipes I’ve tried haven’t had enough oats in it or had too much sugar…etc.
I decided to bake standard tried-and-true old-fashioned oatmeal cookies from the Joy of Cooking cookbook, which Eli gave me a few years ago.
I told myself that I wouldn’t make any modifications and just see how it came out but I couldn’t bring myself to put in 2 whole cups of sugar. Here’s the adapted recipe with Shion changes.
Ingredients:
1 ½ cups all-purpose flour
¾ teaspoon baking soda
¾ teaspoon baking powder
¾ teaspoon salt
1/2 pound (2 sticks) unsalted butter, softened
1 ½ cups packed dark brown sugar
2 large eggs
2 ½ teaspoons vanilla
1 cup dried blueberries
4 cups old-fashioned rolled oats
Directions:
Preheat oven to 350 degrees.
In a medium bowl, mix flour, baking soda, baking powder, and salt.
In an electric mixer, blend butter, sugar, eggs, and vanilla until the consistency is smooth.
Add dry ingredients and mix by hand until well incorporated.
Add oats and blueberries to mix.
Drop the dough onto a greased baking sheet and bake for about 10 – 12 minutes.

The original directions said it would take 6-9 minutes and that you should only put one baking sheet in the oven at a time. I’m a very impatient person when it comes to baking so I stuck all three sheets in it at once. It obviously took a lot longer to bake but came out fine!
Cool on baking sheet for about 5 minutes and then transfer to a baking rack to finish cooling.
They were a huge hit at the office but I still think I could’ve cut down on the sugar a bit. I’ll keep you all posted in my search to find the PERFECT oatmeal cookie recipe. If you have one, let me know!!!
After my baking extravaganza, I decided to deep clean my apartment. I am STILL ridiculously sore from scrubbing. I think the last time I felt pain like this was when I went to a strength training class at the gym 3 years ago and they made me do 200 squats in about…4 minutes. Tears brim my eyes every time I have to walk. I kid you, not.
But look at my beautiful bathroom!!!
You may say two tons of bleach is excessive and unhealthy, but after looking at my bathroom afterwards, I’m going to have to disagree with you. You can eat off those tiles!
