Barbeque Tofu Sandwich

First of all, I wanted to share with you all my latest discovery. Which is actually not anything novel or new to most but definitely to me.

Discovery:

Yes, it’s bread. But freshly baked bread from the Whole Foods bakery.

YES!!!!

You can get fresh bread from a grocery store. Why had I never thought of this before? When I go food shopping, I always stick to whole foods (and I don’t mean the store) without any preservatives but I hesitate every time I get sliced bread. Here is the solution!

I picked a Flax Quinoa bread that they sliced up for me.

The best part is, you can just get half a loaf if you’re not sure if you’ll like it. And there are so many choices!

My pick was definitely a winner.

Yum…

Okay, on to dinner. After my vegetarian sloppy joe debacle, I decided to try again and make a typically meat dish meatless.

My friend Eli had given me this bottle of Blueberry BBQ Sauce and it was calling my name from the cupboards.

Again, short ingredient list:

I took some extra firm tofu and diced them up. Then I heated up about 2-3 Tablespoons on olive oil and threw the tofu in the pan.

Using a wooden spoon, I smooshed the tofu to make it more crumbly – likening it to ground meat.

I then added about 1/4 cup of barbeque sauce…

And sauted it until heated through.

Serve on a slice of bread with cheddar cheese and a side of steamed broccoli.

Oh, so good! The barbeque sauce was spicy and sweet (perfectly so) and had whole blueberries in it! Yay for Vitamin C! The tofu really takes on the flavor of the sauce so I completely forgot I was actually eating tofu.

Since this meal was such a success, I wonder if I can make tofu sloppy joes…
