Tiramisu
This dessert isn’t exactly budget-friendly, I have to say, but it’s delicious and a great special occasion dessert.
When I was home a few months ago, I found HUGE packets of lady fingers for cheap. I usually have a really hard time finding lady fingers and when I do, it’s usually rather expensive because I need to get them at a gourmet store. I was thrilled to find them because it was the perfect reminder that I hadn’t made my famous tiramisu in a while.
What’s really great about this package was that the lady fingers came in packets of six so none of them went to waste and went stale. I usually buy a whole packet of lady fingers and end up using three-fourths of it and by the time I make tiramisu again, the other cookies have gone stale.
This was the perfect solution!
So here’s my famous tiramisu recipe for your viewing/baking pleasure. This is another great dessert to make in the summer because there’s no stove required!
Note: this dessert requires chilling for at least 4 hours!
Ingredients:
-1 packet of lady fingers
-1/3 cup of espresso (I usually just get two shots of espresso at Starbucks)
-3 Tablespoons honey
-3 Tablespoons water
-8 ounces of marscapone cheese at room temperature
-1 cup whipping cream
-3 Tablespoons sugar
-1/2 cup grated dark chocolate
Directions:
In a small saucepan, heat up espresso, honey and water until combined.
Stir marscapone cheese.
Beat whipping cream in a large bowl until light and fluffy. Add sugar.
Fold in marscapone cheese.
Grate chocolate with a cheese grater.
Fold into the whipped cream mixture.
Lay Lady Fingers in a DEEP bowl.
Spoon an even coat of espresso mixture on top. Remember, you’re going to do this at least twice (preferably three times) so make sure you’re dividing it up evenly.
Add a layer of cream mixture on top and repeat as many times as you want.
And voila!
I recommend chilling this overnight so that all the flavors get mixed into each other and the lady fingers get soft.
This is creamy, decadent and delicious! You can also add a couple Tablespoons of rum to the espresso mixture if you’d like for extra flavor.
Every time I make this, I inevitably forget to spoon the espresso mixture on a layer but it still comes out great every time!
