Sloppy Joestew
So I kept seeing vegetarian sloppy joes, made with beans, on blogs and wanted to give it a try. I used to love Sloppy Joes when they served it at my elementary school cafeteria but haven’t had it since.
I picked up a McCormick’s Sloppy Joe Seasoning Mix and hoped for the best. Unfortunately, I was NOT prepared to make it, had no recipe, and was really rushed when making it and it turned out not quite as I had expected. It ended up being more a stew which was actually DELICIOUS! The first night I had it over a salad, not wanting to accept it was more like a stew, but the next two nights I embraced the stew and ate it for lunch with a spoon.
Ingredients:
1 sloppy joe seasoning packet
1 large can of diced tomatoes
1 can of cannellini beans
2 cups baby spinach
Directions:
Read the directions on the back of the Sloppy Joe packet and substitute the meat for beans. Unfortunately, I did not do this so we’ll move on.
Throw diced tomatoes, beans and seasoning packet into a large pot and heat.
Throw in the spinach…
And there you have it! Easy-peasy
So like I said, the first night, I had the “stew” over a bed of more spinach and broccoli with a fried egg on top, sprinkled with hot sauce. Clearly, I couldn’t figure out WHAT I wanted to eat.
But the subsequent days, I ate it as is as a soup and it was DELICIOUS!!! I am not kidding. The seasoning mix is a bit sweet with a little kick and it made such an easy, delicious and healthy meal. I’m definitely going to be making this again.
